Soba are a Japanese type of noodle that became popular in the Edo period, made from buckwheat flour in different percentages mixed with wheat flour.

These high quality noodles are made with 80% of soba (buckwheat flour), with a chewy but firm texture.

In Japan soba are often eaten cold, usually dipped in a tsuyu sauce diluted with some noodles boiling water. After boiling the soba, leave to sit for a few minutes, then rinse well with cold water before serving.
